Maitake — Grifola frondosa

Maitake, known in Japan as the "dancing mushroom" for the joy of finding it in the wild, grows in tender, feathery clusters that resemble layered fans. The flavor is rich and earthy with subtle peppery undertones; the texture is delicate yet substantial enough to hold up to dry-heat cooking.

In restaurant kitchens, maitake shines when roasted whole, pulled apart and tempura-fried, or pan-seared in butter until the edges are crisp. The clusters work beautifully in risotto, pasta, ramen, and on grain bowls, and pair particularly well with miso, soy, and brown butter.

Origin: Locally grown in Sweden by Nelumbo Labs AB Storage: Refrigerate at 2–4 °C. Best consumed within 5–7 days of delivery. Pricing: All prices are per kilogram (SEK/kg). Note: Mushrooms may cause allergic reactions in sensitive individuals.
