Welcome to gourmetmushrooms.se, a brand from Nelumbo Labs AB, where our passion for exceptional mushrooms meets a commitment to sustainability and high quality.
We grow gourmet mushrooms in Gothenburg and sell them to restaurants and shops as well as to private individuals, who order via our website and pick them up from us. The mushrooms are locally grown and as fresh as they are flavorful.
Our mission

We are proud to offer a diverse range of mushrooms that are grown with care, precision and respect for the environment. Our focus on local and sustainable cultivation means that you get mushrooms harvested near you, with a short path from cultivation to plate.
Our gourmet selection
We specialize in gourmet mushrooms, each with its own flavor and texture:
- Lion's Mane (hedgehog's mane mushroom): Mild, slightly sweet flavor and a juicy, stringy texture reminiscent of crab or lobster. Excellent fried in butter.
- Yellow oyster mushroom: Bright yellow, beautiful and fragile, with a delicate, slightly nutty aroma. Cooked quickly, preferably simply in butter or oil.
- Pioppino: Small brown caps on long, crispy stems with a rich, nutty flavor. Keeps its crunch in stews, pasta and risotto.
- Shiitake: Deep, rich umami flavor and firm texture. A classic in Asian cooking and equally delicious in risottos and stews.
- Maitake (coral tick): Also called ”the dancing mushroom.” Crispy, feathery edges and a rich, earthy flavor, best roasted or fried.
Soon: cauliflower mushroom, with crispy, noodle-like flakes and a nutty flavor, and chicken of the woods, with a firm texture reminiscent of chicken. Chicken of the woods should always be cooked well.
